To say orecchiette is to say Puglia. The format became widespread in Puglia between the 12th and 13th centuries. In Bari, orecchiette are called “strasc'nat” in dialect (“drawn out”), from the typical movement of “drawing” the pasta with the finger to obtain the classic round, concave shape. Liguori adds a delicate ridging to this delicious format.
